Summer Lovin’ Debut {*New Blog Series} ~ Strawberry Cheesecake Ice Cream Recipe

It’s time for the debut of my new blog series, “Summer Lovin'”, and I am so excited about all the fun things I’m going to be sharing with you. If you watched this video, then you already know about this new addition to the blog. If you missed the video, just click over to this post to take a peek. The “Summer Lovin'” series will be all about things I am loving during the summer. It may be about a place I travel to, a new recipe I just love for summertime, products that are just perfect for summer, and all sorts of other interesting things. I am thrilled to share a yummy recipe with you for the first post of the series.

This recipe is just perfect for fun times by the pool or as that “go to treat” when you need to relax after a long day in the sun. The kids will love it, your hubby will eat it up before it even has a chance to melt, and you, my friend…well, it will be that perfect little “sweet something” when you need a little treat! And, I will hope that there will be some left for you, but I must warn you…it is unlikely. So, I do encourage that you make some just for YOU, or dip a bit out and place it in a hiding spot in the freezer. I won’t tell!! That’s what friends are for, right?!! Keepin’ your secrets!! If you’ve been following my blog for awhile, well, you know that when I talk about recipes I usually tell you how I changed up the recipe a bit. And, I really like short recipes…a long list of ingredients is likely to result in me leaving a few things out! So, I love this recipe for many reasons, and one is definitely that it has a short ingredient list. As you can see from the recipe above, I also like to use the nonfat ingredients when I can. The recipe was still so yummy!! No need for me to try the regular version! And, my hubby…well, he loved this!!

I love strawberries, and this ice cream is so creamy and delish! I haven’t tried it with other berries, but I am sure you could change it up by using different fruits. Hmm….maybe I should try fresh peaches! I don’t really care for ice cream…I know…how unAmerican of me!! But, I do like homemade ice cream…yes, in one of those old-fashioned ice cream makers! And, I love this ice cream!! Back to my hubby…he gave me a funny look when I told him how it was made…thought he wasn’t going to like it and didn’t really want to try it at first. Well, I was proud of how it turned out and really wanted him to sample it so I put a double scoop in a fancy little bowl and set it before him.

Needless to say, after that first spoonful he was smiling! The bowl was empty before I knew it, and he was asking for more!! Oh, really??!!!….you want more of my healthy ice cream?? Of course, you do!!  It’s such a pretty pink color as it’s being mixed up and is so pretty once scooped into a cone or dish. I wish I had gotten a picture of the dish I served him but just forgot. Guess I was so eager to see how he was going to like it! I will be making it again {soon} so I’ll be sure to snap some pics next time. It didn’t last very long in our freezer, either!

I hope you have fun trying this easy recipe. It is great to make ahead and have on hand for summer guests, and your family will love a bowl of this while you all are making sweet summertime memories!

She will give us a new color prompt each week, and we can create whatever our heart desires based on the colors she has chosen. I am so excited about the first one…Rainbow Sherbet!! I’ve been thinking about what I want to paint for this prompt, and a fun idea came to me this morning so I can’t wait to sketch it out. And, I bought something special for this event that I will show you when I do my post about my creation. Stay tuned…you’re gonna like it!!
